What are the different types of roasts?

 

Roasting it too dark will leave a bitter and burnt taste in your mouth. But roasting it too light will result in sour and grassy flavors.

There are several different levels of roast. Depending on who you talk to, you’ll get different answers. Most people classify roasts in a range, from very light to very dark. We choose to roast the coffee in such a way that the flavors of the coffee (and not the roast) are what shine in the cup.

Here’s why: coffee is the seed of a fruit that offers many different fruity and nutty flavors. Roasting it too dark will leave a bitter and burnt taste in your mouth. But roasting it too light will result in sour and grassy flavors. Each coffee requires its own particular roast profile to showcase it at its best. 

Our experience has been that most coffees display the most interesting flavors with a medium-to-light roast range — so that’s how we roast them! As a result, we don’t offer dark or French roasts.
